High protein, grain free, gluten free, low carb, and low fat- and it’s PIZZA! Now that sounds like a dream come true!
Fit foodie Jo Hill shares one of her all time favourite healthified pizza recipes!
Ingredients:
For the pizza:
- 500g chicken mince
- 2 tbsp chicken spice
- 1 tbsp dried oregano
- 1/2 tsp garlic powder
- 1/2 tsp Himalayan salt
- 1/4 tsp black pepper
For the toppings:
- 1/4 cup tomato paste
- 3-4 tbsp sugar-free sweet chilli sauce
- 1/4 cup reduced-fat grated mozzarella
- Vegetables of choice: Bell peppers, mushrooms, tomatoes, roasted pumpkin, onion, peppadews.
How to make it:
- Preheat the oven to 180 degrees and line a baking tray with some tin foil or baking paper.
- In a bowl, add chicken mince and spices and mix together.
- Press chicken mince into the desired shape on the prepared tray. Press tightly to avoid crumbling once cooked.
- Spread a layer of tomato paste over the chicken mince.
- Slice the vegetables and place them evenly on the top of the base.
- Sprinkle the mozzarella over the vegetables and then top with some sweet chili sauce.
- Bake for 20mins
- Slice and enjoy!
