[RECIPE] Chicken crust pizza

High protein, grain free, gluten free, low carb, and low fat- and it’s PIZZA! Now that sounds like a dream come true!

Fit foodie Jo Hill shares one of her all time favourite healthified pizza recipes!

Ingredients:

For the pizza:

  • 500g chicken mince
  • 2 tbsp chicken spice
  • 1 tbsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp Himalayan salt
  • 1/4 tsp black pepper

For the toppings: 

  • 1/4 cup tomato paste
  • 3-4 tbsp sugar-free sweet chilli sauce
  • 1/4 cup reduced-fat grated mozzarella
  • Vegetables of choice: Bell peppers, mushrooms, tomatoes, roasted pumpkin, onion, peppadews.

How to make it:

  1. Preheat the oven to 180 degrees and line a baking tray with some tin foil or baking paper.
  2. In a bowl, add chicken mince and spices and mix together.
  3. Press chicken mince into the desired shape on the prepared tray. Press tightly to avoid crumbling once cooked.
  4. Spread a layer of tomato paste over the chicken mince.
  5. Slice the vegetables and place them evenly on the top of the base.
  6. Sprinkle the mozzarella over the vegetables and then top with some sweet chili sauce.
  7. Bake for 20mins
  8. Slice and enjoy!
