Everyone loves a good quinoa bowl! They’re easy, protein-packed, and come in so many different combinations, you’ll never get bored.
Here’s one of our fave quinoa bowls to date!
Ingredients:
- 1/2 cup quinoa, rinsed
- 1 tbsp sunflower seeds
- 1 tbsp pine nuts
- Spinach leaves, fresh
- 1 Kiwi fruit, sliced
- 1/2 avocado, squared
- a squeeze of fresh lemon
How to make it:
- Cook quinoa in a pot of salt-seasoned water. Keep checking and stirring until done (quinoa will be tender and translucent). Drain it in a fine mesh strainer before fluffing it with a fork.
- Add to your bowl.
- Slice avocado and break up the spinach leaves.
- Toss the remaining ingredients together and serve.
