Ingredients

Lifestyle Food Gluten Free Sponge Cake Mix is blended for a light crumb, which is the hardest thing to get from gluten-free flours. Let the batter stand for ten minutes before it goes in the tin, since the flours take up liquid more slowly than wheat.

Instructions

  1. Preheat your oven to 180°C.
  2. Follow the instructions on the box to prepare the Gluten Free Sponge Cake Mix.
  3. Line a square baking tin with parchment paper. Scoop the prepared cake mix into the lined baking tin, creating an even layer.
  4. In a separate bowl, thoroughly mix the almond butter, honey and coconut oil.
  5. Drizzle the almond butter mixture evenly over the cake mix. Sprinkle the shredded almonds across the top, adding a sprinkle of sugar for a bit of extra sweetness and crunch.
  6. Place the tin in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the centre comes out clean.
  7. Allow the bars to cool in the tin before slicing them into individual bars. This ensures they set properly and are easy to cut.
