Carb-free doesn’t have to mean taste-free with delicious recipes like this ‘no-wrap’ chicken lettuce wrap recipe.
You can also substitute lettuce for other leafy greens like fresh spinach or kale for an added nutrient boost.
Ingredients
- 2 cooked chicken breasts, cut into strips
- 1 head butter lettuce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 onion, diced
- 2 tbsp soy sauce
- 1 tbsp rice wine vinegar
- 1 tbsp freshly grated ginger
- 1 celery stick, sliced
- 2 green onions, thinly sliced
- 6 baby tomatoes, sliced
- Himalayan salt and freshly ground black pepper, to taste
Butter lettuce is a popular option over the more common iceberg variety as it actually contains slightly more plant-based protein. It also has more riboflavin, niacin and folate, and is a great source of vitamins A and K, as well as potassium.
Instructions
- Heat olive oil in a saucepan over medium high heat.
- Add chicken and cook until browned, about 3-5 minutes.
- Stir in garlic, onion, soy sauce, rice wine vinegar, and ginger for about 1-2 minutes until onions become translucent.
- Stir in celery, tomatoes and green onions until tender, about 1-2 minutes.
- Season mixture with salt and pepper to taste.
- Spoon mixture into the centre of a lettuce leaf and serve.
