Grilled Salmon Salad

Spruce up your salad with some protein-packed grilled salmon!

Ingredients
  • 250g salmon fillet
  • Olive oil
  • 2 spring onions, chopped
  • 1 cup baby tomatoes
  • 1 tbsp capers
  • 90g feta cheese
  • 2 cups mixed leafy greens
  • 1/2 cup chopped walnuts
  • 2 tbsp of home-made dressing
How to make it
  • Grill or fry the salmon as per your preference. Set aide to cool.
  • Mix all salad ingredients together in a bowl. Add the dressing.
  • Combine in the onions and capers.
  • Slice the salmon into strips or keep whole and place on top of the salad.
Home-made salad dressing
  • Lemon juice
  • Lemon zest
  • Olive oil
  • Dijon mustard
  • Honey
  • Garlic
  • Mixed herbs
  • Salt and pepper
Method
  • Combine all ingredients in a blender and blend until well combined,
  • Add salt and pepper to taste.
