Spruce up your salad with some protein-packed grilled salmon!
Ingredients
- 250g salmon fillet
- Olive oil
- 2 spring onions, chopped
- 1 cup baby tomatoes
- 1 tbsp capers
- 90g feta cheese
- 2 cups mixed leafy greens
- 1/2 cup chopped walnuts
- 2 tbsp of home-made dressing
How to make it
- Grill or fry the salmon as per your preference. Set aide to cool.
- Mix all salad ingredients together in a bowl. Add the dressing.
- Combine in the onions and capers.
- Slice the salmon into strips or keep whole and place on top of the salad.
Home-made salad dressing
- Lemon juice
- Lemon zest
- Olive oil
- Dijon mustard
- Honey
- Garlic
- Mixed herbs
- Salt and pepper
Method
- Combine all ingredients in a blender and blend until well combined,
- Add salt and pepper to taste.
