[RECIPE] Peanut Butter Oat Cookies

Snacks or after-meal treats don’t need to be bland and tasteless when following a health-conscious eating plan.

These Peanut Butter Oat Cookies from Life in the South include wholesome vegan-friendly ingredients and minimal sugar for a healthier option for work or school lunchboxes.

Ingredients

  • 1 cup dairy-free chocolate chips
  • 1 cups rolled oats blended into flour
  • 1 cup coconut flour
  • 1 cup crunchy peanut butter
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • ½ cup coconut oil, melted
  • cup soy milk
  • 2 tsp vanilla extract
  • 1 ¼ cups brown sugar

Coconut flour is a rich source of fibre, protein and healthy fats. It is an ideal replacement to refined flour as it does not contain any wheat or grains. It also has a low GI.

Method

  1. Preheat the oven to 180°C.
  2. Place the oat flour, coconut flour, baking powder, baking soda, and salt in a bowl.
  3. Whisk together the melted coconut oil, peanut butter, soy milk, vanilla extract, and sugar.
  4. Pour the wet ingredients into the dry until you have a smooth batter. Use an ice cream scoop to scoop out the cookies. Add the giant dairy-free chocolate on top, place on a parchment-lined baking tray, and bake for 12-15 minutes until golden.
  5. Serve and enjoy!

Rolled oats have a lower glycaemic index than the processed instant variety. This means a sustained release of energy throughout your morning, instead of those horrible blood sugar spikes that leave you tired by mid-morning.

Cook time: 12-15 minutes

Serves: 6-8
