Mango delight Bowl

Bulk up your summer salad with some protein packed quinoa! Here’s a delicious mango bowl that’ll leave you delighted…
Ingredients
  • 1/2 cup quinoa, rinsed
  • 1 tbsp almonds
  • 1/2 cubed avo
  • 1/2 mango
  • Mint leaves
  • 2 tbsp olives
  • 1/2 red onion
How to make it
  • Cook quinoa in a pot of salt-seasoned water at a rolling boil. Quinoa is done when translucent and tender. Drain it when done, then fluff it with a fork.
  • Cut mango into chunks.
  • Slice the red onion into fine strips.
  • Add all ingredients to a bowl with your quinoa and serve.
