Bulk up your summer salad with some protein packed quinoa! Here’s a delicious mango bowl that’ll leave you delighted…
Ingredients
- 1/2 cup quinoa, rinsed
- 1 tbsp almonds
- 1/2 cubed avo
- 1/2 mango
- Mint leaves
- 2 tbsp olives
- 1/2 red onion
How to make it
- Cook quinoa in a pot of salt-seasoned water at a rolling boil. Quinoa is done when translucent and tender. Drain it when done, then fluff it with a fork.
- Cut mango into chunks.
- Slice the red onion into fine strips.
- Add all ingredients to a bowl with your quinoa and serve.
