Berry Yoghurt Bark

It’s always difficult getting back into the swing of things in Jan after all those delicious surgery treats we consume during the festive season. Here’s a delicious recipe that’ll make it a little easier!

Ingredients

  • 2 cups nonfat plain yogurt
  • 1/4 cup agave (honey or maple syrup will also work)
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon fresh lemon juice
  • Strawberries, sliced
  • Blueberries
  • Raspberries
  • Chopped nuts, for garnish

Instructions

  • In a mixing bowl add yogurt, agave, vanilla, lemon juice; mix until well combined.
  • Line a baking tray with wax paper or foil and set aside
  • Transfer yogurt mixture to the previously prepared baking tray and spread it to an even thickness.
  • Top with berries and chopped nuts.
  • Freeze for 2 to 4 hours, or until it’s completely frozen.
  • Use a sharp knife to break the bark into pieces.
  • Keep in the freezer.
