[RECIPE] Protein Microwave Cake

If you’re looking for a protein-packed dessert that is incredibly easy to make and won’t derail your calorie-controlled diet, this Protein Microwave Cake is the ideal recipe.

This microwave-ready dessert dish is ideal for those moments when you need a quick and delicious fix.

Ingredients

  • 1 ¼ cups oat flour
  • 1 ½ scoops Biogen Lean Whey Protein Powder, Choc Coconut Cluster flavour
  • ⅔ cup unsweetened cocoa powder
  • ¾ cup coconut sugar
  • 3 tsp baking powder
  • ½ cup + 1 tbsp coconut oil
  • 1 ¾ cups + 2 tbsp warm water

Frosting ingredients:

  • 100g sugar-free dark chocolate
  • ⅓ cup coconut milk, chilled

Method

  1. Line a microwave-safe dish with parchment paper. Grease the dish lightly and dust it with flour, ensuring your cake doesn’t stick.
  2. Mix dry ingredients in a bowl. Sift together the oat flour, whey protein powder, unsweetened cocoa powder, and baking powder.
  3. Stir in the coconut sugar and then add the coconut oil. Gradually pour in the warm water, and mix everything until you have a smooth and consistent batter.
  4. Pour your cake batter into the prepared dish. Pop it into the microwave and heat it for about 5 minutes. You’ll know it’s ready when a toothpick inserted into the centre comes out clean. Once done, let it cool for a bit.
  5. While your cake is cooling, prepare your frosting by melting the chocolate. Gradually mix in the chilled coconut milk until you have a silky and indulgent frosting.
  6. Once your cake has cooled, generously frost it with the delicious chocolate-coconut frosting.
  7. Serve and enjoy with a topping of fresh strawberries.
