This creamy Coconut Chicken Curry recipe is a delicious and healthy meal that you can conveniently make in one pot.
- 150-180g chicken fillet
- ¼ cup red onion, chopped
- ¼ pepper, chopped
- ½-1 cup diced pumpkin
- ½-1 cup coconut milk
- Fresh garlic
- Curry powder
- Fresh chilli
- 1 tsp coconut oil
- Fresh coriander
Coconut milk is made from the combination of white coconut flesh and water. It’s a delicious and creamy dairy alternative with a subtle, sweet, coconutty flavour that you can use in numerous recipes.
- Heat pan with coconut oil, onion garlic and spices and cook until golden.
- Add your chicken and other vegetables and cook for 2-5 minutes.
- Add the coconut milk and allow chicken to finish cooking.
Serving suggestion: Serve with 1-2 cups mixed vegetables, cauliflower rice, basmati rice or sweet potato mash.
