[#RECIPE] Moniquefit’s Coconut Chicken Curry

This creamy Coconut Chicken Curry recipe is a delicious and healthy meal that you can conveniently make in one pot.

Ingredients

  • 150-180g chicken fillet
  • ¼ cup red onion, chopped
  • ¼ pepper, chopped
  • ½-1 cup diced pumpkin
  • ½-1 cup coconut milk
  • Fresh garlic
  • Turmeric
  • Curry powder
  • Fresh chilli
  • 1 tsp coconut oil
  • Fresh coriander

Coconut milk is made from the combination of white coconut flesh and water. It’s a delicious and creamy dairy alternative with a subtle, sweet, coconutty flavour that you can use in numerous recipes.

Instructions

  1. Heat pan with coconut oil, onion garlic and spices and cook until golden.
  2. Add your chicken and other vegetables and cook for 2-5 minutes.
  3. Add the coconut milk and allow chicken to finish cooking.

Serving suggestion: Serve with 1-2 cups mixed vegetables, cauliflower rice, basmati rice or sweet potato mash.
