[RECIPE] Sugar-Free Chocolate Chip Protein Muffins

This Sugar-Free Chocolate Chip Protein Muffins recipe offers a delicious and nutritious breakfast or snack option.

Packed with plant-based protein and natural sweeteners, they’re a perfect way to start your day or curb cravings without adding extra sugar to your diet.

Ingredients

  • 1 cup almond flour
  • ½ cup Biogen Plant Based Protein, Chocolate flavour 
  • ¼ cup coconut flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsweetened applesauce
  • ¼ cup maple syrup
  • ¼ cup unsweetened almond milk
  • 1 tsp vanilla extract
  • ½ cup sugar-free chocolate chips

Biogen Plant Based Protein is an excellent protein choice for athletes and individuals following a vegan or dairy-free lifestyle. Made from rice and pea protein, and free from gluten, dairy and lactose, this protein powder it easily digestible, especially with the added bamboo fibre.

Instructions

  1. Preheat your oven to 175°C.
  2. In a large bowl, whisk together almond flour, protein powder, coconut flour, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together applesauce, maple syrup, almond milk, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to over mix.
  5. Gently fold in the sugar-free dark chocolate chips.
  6. Line a muffin tin with paper liners.
  7. Divide the batter evenly among the muffin cups.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
