[RECIPE] Sesame oil kimbap

Kimbap is a seaweed wrapped dish that is a popular on-the-go meal in Korea.

Ingredients

  • Sesame Oil
  • Seaweed paper
  • Quinoa
  • Carrot slices
  • Cucumber slices
  • Chickpea egg scramble
  • Sliced avocado
  • Sprouts
  • Pickled radishes or red onion
  • Sesame seeds

Sesame oil is rich in sesamol and sesaminol, powerful antioxidants that combat cell damage and may reduce inflammation and disease risk. Sesame oil also exhibits anti-inflammatory properties, which might benefit conditions like arthritis.

Instructions

  1. Cook the quinoa according to the packet instructions.
  2. Make the chickpea scramble by mixing ½ cup chickpea flour with equal parts water or milk. Pour into a pan with some herbs and spices and cook until it resembles egg scramble.
  3. Add 1-2 tbsp sesame oil, 1 tbsp rice vinegar, and some salt. Add 2-3 tbsp of the quinoa to the edge of the seaweed paper, along with the sliced carrot, cucumber, vegan egg scramble, avocado, pickled radish, and the sprouts.
  4. Roll up tightly, wetting the edge of the seaweed so it will stick. Brush with more sesame oil and sesame seeds, slice and enjoy!
