[RECIPE] Spiced Banana Bread

Warm, spiced, and naturally sweet, this banana bread recipe is a comforting twist on a classic loaf.

It is perfect for breakfast, a pre-workout pick-me-up, or on-the-go snack.

Ingredients

  • 2 medium ripe bananas, mashed
  • ½ cup milk
  • ¼ cup coconut oil
  • 1 tsp vanilla extract
  • ⅓ cup mashed plums
  • ⅓ cup coconut sugar
  • 1⅔ cups spelt flour
  • 1–2 scoops Biogen Complete Whey protein powder, Salted Caramel flavour
  • 1 tsp baking powder 
  • Pinch of salt 
  • Dash of cinnamon
  • Dash of nutmeg

Method

  1. In a bowl, mash the bananas. Add the milk, coconut oil, vanilla extract, coconut sugar, and mashed plums. Mix until well combined.
  2. Fold in the spelt flour, protein powder, baking powder, cinnamon, nutmeg, and salt. Mix until just combined.
  3. Pour the batter into a greased or parchment-lined loaf tin. Bake at 180°C for 30–40 minutes, or until golden and cooked through.
  4. Allow the loaf to cool before slicing. Serve with granola crumbs and a drizzle of icing sugar frosting if desired.
