Ingredients
- 1 cup all-purpose flour
- ½ cup Primal Peanut Butter Powder
- ½ cup sugar substitute
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsweetened applesauce
- ½ cup unsweetened almond milk or any low-calorie milk alternative
- 1 large egg
- 1 tsp vanilla extract
- ⅓ cup mini chocolate chips (dark chocolate for lower calories)

How to make it
- Preheat your oven to 180°C. Get your muffin tin ready by lining it with paper cups or lightly greasing it.
- In a big bowl, combine the flour, Primal Peanut Butter powder, sweetener, baking powder, baking soda and salt. Whisk them together thoroughly.
- In a separate bowl, whisk together the applesauce, almond milk, egg and vanilla essence until completely blended.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Don’t overmix; a few lumps are fine. Carefully fold in the mini chocolate chips.
- Divide the batter evenly among the muffin cups, filling them about two-thirds full. Bake for 15-18 minutes or until a toothpick inserted into the centre of a muffin comes out clean.
- Let the muffins rest in the tin for 5 minutes before transferring them to a wire rack to cool completely.
