This Peanut Butter and Chocolate Chip Protein Muffin recipe is the perfect choice for those looking for a delicious muscle-building snack or breakfast.

Made with protein-infused Primal Peanut Butter Powder, these muffins perfectly pair the rich flavour of peanut butter with the sweetness of chocolate chips for a tasty treat that will leave you craving more.

Ingredients

  • 1 cup all-purpose flour
  • ½ cup Primal Peanut Butter Powder 
  • ½ cup sugar substitute
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsweetened applesauce
  • ½ cup unsweetened almond milk or any low-calorie milk alternative
  • 1 large egg
  • 1 tsp vanilla extract
  • ⅓ cup mini chocolate chips (dark chocolate for lower calories)

Primal Peanut Butter Powder is a versatile and tasty addition to your smoothies and baking mixes. Providing a pleasant peanut butter taste profile with over 7g of protein without any added sugar or salt.

How to make it

  1. Preheat your oven to 180°C. Get your muffin tin ready by lining it with paper cups or lightly greasing it.
  2. In a big bowl, combine the flour, Primal Peanut Butter powder, sweetener, baking powder, baking soda and salt. Whisk them together thoroughly.
  3. In a separate bowl, whisk together the applesauce, almond milk, egg and vanilla essence until completely blended.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Don’t overmix; a few lumps are fine. Carefully fold in the mini chocolate chips.
  5. Divide the batter evenly among the muffin cups, filling them about two-thirds full. Bake for 15-18 minutes or until a toothpick inserted into the centre of a muffin comes out clean.
  6. Let the muffins rest in the tin for 5 minutes before transferring them to a wire rack to cool completely.
