Grilled chicken salad with avo and mango

This protein-packed salad is full of nutrients and is bound to provide a tasty meal!
Ingredients:
  • 1 large chicken breast
  • 1 mango, diced
  • 1/2 avocado, sliced
  • 1/2 red onion, diced
  • Handful leafy greens, chopped (spinach, kale,  and/or romaine lettuce)
  • Pine nuts (optional)

Home-made vinaigrette

  • Extra virgin olive oil
  • Balsamic vinegar
  • Pinch of Himalayan rock salt
How to make it
  • Grill chicken breast until cooked through. Set aside to cool.
  • Stir together vinaigrette ingredients and set aside.
  • Combine leafy greens with other ingredients.
  • Slice chicken and toss into salad, along with pine nuts.
  • Drizzle dressing on top and serve!
