This protein-packed salad is full of nutrients and is bound to provide a tasty meal!
Ingredients:
- 1 large chicken breast
- 1 mango, diced
- 1/2 avocado, sliced
- 1/2 red onion, diced
- Handful leafy greens, chopped (spinach, kale, and/or romaine lettuce)
- Pine nuts (optional)
Home-made vinaigrette
- Extra virgin olive oil
- Balsamic vinegar
- Pinch of Himalayan rock salt
How to make it
- Grill chicken breast until cooked through. Set aside to cool.
- Stir together vinaigrette ingredients and set aside.
- Combine leafy greens with other ingredients.
- Slice chicken and toss into salad, along with pine nuts.
- Drizzle dressing on top and serve!
