[RECIPE] Basmati Rice Plant-based Bowl

Rice bowls are versatile dishes that allow your creative flair to shine in the kitchen with endless options for the base – think basmati, brown, white, wild or cauliflower rice – and healthful ingredients that can add taste, texture, and flavour along with nutrients and protein.

Ingredients

  • Baked potato
  • Roasted chickpeas
  • 1 packet basmati rice
  • Olive oil
  • Kale leaves, massaged
  • 2 apples, sliced
  • Sun-dried tomatoes
  • 1 avocado, sliced
  • Pomegranate jewels
  • Hummus
  • Vegetable balls of choice

Dressing

  • ¼ cup white balsamic vinegar
  • 2 tbsp vegan Worcester sauce
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Method

  1. Cook the rice according to the packet instructions.
  2. Add the rest of the ingredients to a bowl, mix the dressing and pour over the salad.
  3. Add salt and pepper and serve.
