Ingredients
- Baked potato
- Roasted chickpeas
- 1 packet basmati rice
- Olive oil
- Kale leaves, massaged
- 2 apples, sliced
- Sun-dried tomatoes
- 1 avocado, sliced
- Pomegranate jewels
- Hummus
- Vegetable balls of choice
Dressing
- ¼ cup white balsamic vinegar
- 2 tbsp vegan Worcester sauce
- 1 tbsp honey
- 1 tsp Dijon mustard
- Salt and pepper to taste
Method
- Cook the rice according to the packet instructions.
- Add the rest of the ingredients to a bowl, mix the dressing and pour over the salad.
- Add salt and pepper and serve.
