[RECIPE] Baked Oats Cinnamon Sugar Doughnuts

Doughnuts are a firm favourite when it’s time for a treat but you don’t have to turn to unhealthy options with this Baked Oats Cinnamon Sugar Doughnuts recipe.

You’ll get all the satisfaction without the unwanted excess calories and sugar to keep your diet on track.

Ingredients for doughnuts

  • 2 cups ground rolled oats or flour
  • ½ tsp baking soda
  • 1 tsp baking powder
  • 1 ¼ cups milk or plant milk
  • 1 tbsp coconut oil or olive oil
  • ⅓ cup coconut sugar
  • ž tsp vanilla extract
  • 1 tsp cinnamon

Ingredients for sugar coating

  • ½ cup coconut sugar
  • 1-2 tsp cinnamon

Cinnamon contains antioxidants, such as polyphenols, that have anti-inflammatory effects, helping to reduce swelling and inflammation in the body. Also rich in antioxidants, cinnamon may help defend the body from oxidative damage caused by free radicals.

Instructions

  1. Preheat oven to 180°C.
  2. In a large bowl, mix oat flour, coconut sugar, baking soda, baking powder and cinnamon. Add oil, milk and vanilla, stirring until just combined.
  3. Lightly spray a doughnut pan with oil. Fill a piping bag with batter and pipe into the pan. Tap the pan to level the batter.
  4. Bake for 10-12 minutes.
  5. Let the doughnuts cool completely before coating with cinnamon sugar.
